Creamy Tomato and Brown Butter Sage Sauce

Nutty brown butter, sweet tomato, and fragrant sage come together in a rich, earthy sauce that feels like autumn in a bowl.

A young chef, lost in the aroma of roasted butter, thought to himself that maybe... just maybe... the secret to a great sauce was all in the butter.

"Alright, how much butter are we talking? YES CHEF!"

Ingredients

  • 1 sachet Yes Chef Rich Red Tomato Recipe Base (30g)

  • 250ml cream

  • 30g butter

  • 4 fresh sage leaves (or 1 tsp dried sage)

  • Salt and pepper, to taste

Instructions

  1. In a pan, melt the 30g of butter over medium heat. Continue cooking the butter until it turns a golden brown and gives off a nutty aroma (about 3-4 minutes). Be careful not to burn it, once it's browned, remove it from the heat immediately.

  2. Warm the Yes Chef Rich Red Tomato Recipe Base: Stir the base in a pan over medium heat until warmed through.

  3. Gradually add the cream, stirring continuously to combine until smooth and creamy.

  4. In a separate pan, fry the fresh sage leaves (or use dried sage) in a little butter or oil for about 1-2 minutes until crispy.

  5. Add the fried sage into the sauce or sprinkle over the top as garnish.

  6. Season with salt and pepper to taste. Let the sauce simmer for a few minutes, allowing the flavours to meld together.
