Creamy Tomato and Brown Butter Sage Sauce

1 sachet Yes Chef Rich Red Tomato Recipe Base (30g)

250ml cream

30g butter

4 fresh sage leaves (or 1 tsp dried sage)

Salt and pepper, to taste

In a pan, melt the 30g of butter over medium heat. Continue cooking the butter until it turns a golden brown and gives off a nutty aroma (about 3-4 minutes). Be careful not to burn it, once it's browned, remove it from the heat immediately.

Warm the Yes Chef Rich Red Tomato Recipe Base: Stir the base in a pan over medium heat until warmed through.

Gradually add the cream, stirring continuously to combine until smooth and creamy.

In a separate pan, fry the fresh sage leaves (or use dried sage) in a little butter or oil for about 1-2 minutes until crispy.

Add the fried sage into the sauce or sprinkle over the top as garnish.

Season with salt and pepper to taste. Let the sauce simmer for a few minutes, allowing the flavours to meld together.
